The Basic Vegan Sugar Cookie

I had posted this recipe to Facebook when I made these cookies a while back.  It's such a good one that I wanted to share it again!  If you need a really good homemade sugar cookie recipe then this is the one!

Ingredients
5 cups organic unbleached flour
4 teaspoons Baking Powder
2 cups organic white sugar
1/2 cup almond milk, soy milk, or soy milk creamer (I used vanilla rice milk)
1 tablespoon organic vanilla, almond, coconut or lemon extract
1 13-ounce carton of margarine (Whipped Organic Earth Balance Buttery Spread is recommended)

Oven Preparation

Preheat oven 350 degrees.
Spray cookie sheets with non-stick oil spray or line with parchment paper (I used Pampered Chef stoneware).

Preparation
Cream the margarine and sugar together until light and fluffy (using hand or stand mixer).
Add baking powder to mixture and beat until incorporated.
Add the 1/2 cup of milk and mix.
Add the flavor extract and mix.
Slowly add flour until all blended... do not over process.

Refrigerate
The Basic Vegan Sugar Cookie Dough needs to be refrigerated.
Roll the dough in the bowl into a large log shape and wrap with parchment paper (I rolled into two logs).
Add a layer of plastic wrap and carefully seal it and lay on a shelf in your refrigerator.
This log can also be frozen for use at another time.

Bake
Preheat oven to 350 degrees F.
Remove the dough log from the refrigerator and remove the coverings.
Slice 5/8 inch circles and place on cookie sheet.
If you want cut cookies, let dough sit out for 10 minutes and then roll out to 1/4" onto floured surface and cut in desired shapes. Place cut-outs on cookie sheet.
Bake for 10 to 12 minutes. After the cookies have cooled on the cookie sheet for about 5 minutes, use a spatula and lift them onto a cake rack to cool completely.

I've made these cookies twice now and they turned out perfect both times! It really is a great sugar cookie recipe!
